A 3 star establishment comes with the highest expectations. And HERTOG JAN meets them when it comes down to food.
The premises were very simply decorated and located about half an hour from the historic Bruges by car. There was light music playing in the background which was surprising for the genre of fine restaurants. They usually avoid music. But it was not disturbing.
People were dressed formally, men in suits setting quite a formal ambience even at lunch time.
We ordered the three course meal and we were overwhelmed by the amount of food that came; a heavenly rain of tiny appetizers. The complex, intriguing and gorgeous Amuse Bouches were impressive. The repetition of anise through out the dishes was overdone nevertheless.
Service was too slow and indifferent...
