We visited Spondi twice in the past. Both times we left feeling astonished that this level of cooking was taking place in Greece. It was happy times when Spondi went from 1 Michelin star to 2. But then, there were some changes going on. Its star chef Arnaud Bignon, protégée of the 3* star Eric Frechon, left. Greece's financial turbulence got to him. He moved on, to the Greenhouse in London and put it on top of its game by gaining a second star in just a few months! After Arnaud's departure, the names of some decorated 3* chefs were supposed to replace him, only to create some confusion about the future of the restaurant. To cut a long story short, Spondi bounce back and still has 2 shiny stars on its belt. Arnaud's sous chef, Aggelos Lantos proved to be a worthy successor and a chef to look out for. It seems that Arnaud was not only a talented chef but an effective teacher as well...
